Pumpkin soup is one of my fall favorites, and I have been making this pumpkin soup recipe since before I was married. I would like to give credit to one of my roommates for this super tasty, very simple recipe….but I can’t remember who shared the recipe with me. Its origin is of less importance than its tasty goodness, so you might want to hang onto this one for not only the fall season but for the crazy, cold winter as well!
Ingredients:
3 cups vegetable or chicken broth
1 cup whipping cream
15 oz. can 100 % pure pumpkin
3 Tbsp brown sugar
1 tsp cumin
1/2 tsp chili powder
1/8 tsp nutmeg
3/4 cup shredded cheddar cheese
Directions: Bring broth and cream to a boil. Whisk in remaining ingredients (except cheese). Reduce heat to medium/low and simmer until soup thickens (about 15-20 minutes). Season with salt and pepper. Place in bowls and garnish with cheese. Enjoy!
